Balsamic onion jam

Serves: ¾ cup
- 2 brown onions
- 10g butter
- 2 tbsp soft brown sugar
- 2 tbsp balsamic vinegar
- 150ml water
- 2 tsp thyme leaves
- ¼ tsp salt
- Peel and slice the onions into thin strips.
- Melt the butter in a saucepan over a medium heat and add the onion.
- Cook gently, for 15 - 20 minutes until the onions are very soft and are starting to colour. Stir regularly to prevent them sticking or burning.
- Add the brown sugar and stir for a minute to melt the sugar.
- Pour over the balsamic vinegar, bubble for a few seconds then add the water, thyme leaves and salt to taste.
- Let the mixture simmer gently for 10-15 minutes until most of the water has evaporated.
- Allow to cool before using.
