Balsamic onion jam

Serves: ¾ cup
Ingredients
  • 2 brown onions
  • 10g butter
  • 2 tbsp soft brown sugar
  • 2 tbsp balsamic vinegar
  • 150ml water
  • 2 tsp thyme leaves
  • ¼ tsp salt
Instructions
  1. Peel and slice the onions into thin strips.
  2. Melt the butter in a saucepan over a medium heat and add the onion.
  3. Cook gently, for 15 - 20 minutes until the onions are very soft and are starting to colour. Stir regularly to prevent them sticking or burning.
  4. Add the brown sugar and stir for a minute to melt the sugar.
  5. Pour over the balsamic vinegar, bubble for a few seconds then add the water, thyme leaves and salt to taste.
  6. Let the mixture simmer gently for 10-15 minutes until most of the water has evaporated.
  7. Allow to cool before using.
