Blueberry Chia Overnight Oats

Ingredients
  • ½ cup frozen blueberries
  • ½ cup milk
  • ½ cup unsweetened greek yoghurt
  • 1 tsp honey
  • ½ cup rolled oats
  • 2 tbsp chia seeds
  • ¼ tsp ground cinnamon
Instructions
  1. Put the blueberries, milk, yoghurt and honey into a food processor and blend for a couple of minutes to break up the blueberries.
  2. Place the oats, chia seeds and cinnamon in a bowl.
  3. Pour over the blueberry mixture and stir well to combine.
  4. Divide into serving bowls or jars and cover or seal.
  5. Refrigerate overnight, or for at least 8 hours.
  6. Top with your favourite fruit, nuts and a little extra drizzle of honey if desired, and enjoy!
Notes
The quantities in this recipe make enough overnight oats for 2 breakfasts. The recipe can easily be doubled to make enough to last the working week.
