Spiced Apple Waffles

Ingredients
  • 2 cups flour
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ cup soft brown sugar
  • 1 tbsp caster sugar
  • ½ tsp salt
  • 1½ cups milk
  • 45g butter, melted
  • 1 tsp vanilla essence
  • 2 eggs, separated
  • 1 apple for the waffles, plus additional apple slices to serve
  • maple syrup to serve
Instructions
  1. Preheat the waffle maker.
  2. Put the egg whites into a medium bowl and beat with an electric mixer until stiff peaks have formed.
  3. Place the flour, baking powder, spices, sugars and salt in a large bowl and stir with a whisk to combine.
  4. In a separate bowl, combine the milk, melted butter, vanilla and egg yolks.
  5. Pour the wet ingredients into the dry ingredients and stir with a whisk until you have a smooth batter.
  6. Grate one of the apples using a coarse grater and quickly stir through the waffle batter. Note: grated apple will brown very quickly so its best only to grate it when you are ready to add it to the waffle batter.
  7. Gently fold the egg whites through the batter.
  8. Lightly spray the plates of the waffle maker with oil and spoon ¾ cup of batter on to the bottom plate, spreading it gently to ensure even coverage. Close the lid and cook for 5-7 minutes until golden. Remove the cooked waffles and set aside. Repeat with the remaining batter.
  9. Tip: the waffles will be cooked about 1 minute after the waffle maker stops steaming...
  10. Serve the waffles piled high and drizzled generously with maple syrup and apple slices.
